Holy Shiz!!! Home Made Salsa & Quesadillas

WARNING: If you have a wimpy tongue DO NOT try this recipe!


I however, am a spicy food connoisseur! The hotter the better!


We had a bunch of tomatoes ripen at the same time so I decided to dabble in the home made salsa world...I must say my first batch is mighty tasty!




Holy Shiz Salsa!


Here is what you will need:


- 8 small sweet peppers (you can find them bagged in your produce section)

- 6 jalapeno peppers

-4 sereno peppers

- 1/2 Tbs. habenero pepper powder (or you could use a fresh pepper)

- 4 large tomatoes

- 1/2 cup chopped cilantro

- 1/2 large red onion or 1 small minced

- 3 cloves minced garlic

- 1 1/2 limes juiced + zest of 1 lime

- 1 Tbs. olive oil

- 1/2 tsp each: salt, pepper, cumin


Here's how to mix this shiz up:


- Line half of your grill with foil...heat between 400 -500 degrees


- Lay all peppers and thickly sliced tomatoes on foil...grill for 25-30 min. turning every few minutes. Make sure peppers are soft and have nice grill marks.


- In a large bowl zest lime and squeeze lime juice.

- add in Tbs. of olive oil

- whisk in salt, pepper, cumin, habenero spices, and minced garlic

- roughly chop tomatoes and all peppers (remove seeds for less heat) and add to bowl

- add in red onion and cilantro

- mix thoroughly and refrigerate


- serve with tortilla chips or with your favorite quesadilla recipe!

- Have ice water or cold beer near by....this ones a scorcher.


* leaving out the habenero and all seeds would make this manageable for all you wussies out there!*

Black Bean and Grilled Corn Quesadillas


what you will need:

- sliced grilled chicken (I marinade mine with lime juice, olive oil, Cayenne pepper, salt, and cumin)

- 15 oz. can of black beans rinsed

- grilled corn cut off the cobb

- chopped red onion

- Mexican cheese

- your favorite tortillas

- plain Greek yogurt for topping


- heat griddle to 350 degrees


- spray with cooking spray


- lay down a few tortillas

- top with:

cheese

chicken

black beans

grilled corn

red onion

a sprinkle of cheese for binding


- top with another tortilla

- heat for 2-3 minutes each side

- slice with a pizza cutter and arrange on your favorite platter.


- top with a dollop of Greek yogurt and some Holy Shiz!
